Sat. Sept. 15, 2018 – long day ahead

Beautiful Chicago morning, sunny, comfortable, blue sky.

I’ve got a couple of hours to get all of us ready and to the right place. Then as few hours as we thought we could have, but still far too many. This will be a long day.

It seems a bit strange to me that I can’t easily find more pics of the hurricane. Or Boston. You’d almost think they weren’t a big deal.

    Off to San Antonio. TSA preCheck line closed, of course. Got a card so I didn’t have to take my shoes off. Carryons had to be emptied of electronics. Still got pulled out of line. Why did I pay for TSA pre? Oh, yeah, so I don’t have to take my fucking shoes off!

    Off for a nice weekend in the Black Forest. Funny, we hiked a trail that has these information stops – all about Black Forest Ham. Only, along the whole trail, we only saw cattle, no pigs. But at the end, we had a lovely plate of cold-smoked bacon. Not sure if this is known in the US, but it is prepared a bit differently, and intended to be eaten cold.

    We do something similar ourselves every winter – get two sides of bacon, rub them with pickling salt and herbs. After curing, we cold smoke them for a week, then hang them to dry in the attic. Thinly slice, and eat by itself or on a slice of bread. Yum.

    Our homemade bacon fries a bit strangely, though. It’s good, but the fat doesn’t render out during frying – there’s no pork fat left in the pan. What we hadn’t realized: apparently the bacon that you intend to fry is normally hot-smoked (well, warm-smoked) at something around 65C. We’ll try that this winter as well, and see if it makes a difference.

    Haven’t tried more than the thinnest slice of my home cured and smoked ham, but the slice was more like prosciutto. Very tasty.

    Keep an eye on the tropics this week. The local San Antonio Clear Channel talk station created the “gas shortage” Labor Day weekend last year.

    If you’re down on the Riverwalk, we feed our kids at The Original Mexican Restaurant. That is the actual name of the place.

    I do bacon in the oven about once a year. did some just a couple nights ago as a matter of fact. I’d sure love to try your method. I use two broiling pans at 350 degrees F, turning them once or twice for about 20-25 minutes. You need to be careful at the very end because they can go from soft to crispy in only a few minutes. Oddly enough, the older the bacon, the more quickly it cooks. Then I pour the fat off and run it through a sieve and then a coffee filter, leaving me with three quarters of a cup of deliciously strained grease. About all I ever use the grease for is cornbread, but damn! it’s good. The bacon gets vacuum sealed between paper towels and frozen for use as needed.

    Which reminds me of a funny story. When my cousins were kids they would grow marijuana and one time they boiled a bunch of it up with butter to make pot flavored ghee. So one day their mom finds this jar of green grease in the refrigerator and feeds the whole thing to the dog. Hannah, the dog, got completely stoned and stayed torpid and splayed on the floor for 2 days. Of course mom had no idea what she had done and the kids couldn’t give her a straight answer because they were laughing too hard. Eventually the truth came out, their mom was cool so it’s just become one of those family stories.

    Watched the news about the hurricane and flooding in New Bern. They were rescuing people in water that was only ankle deep, using rubber rafts. These people can obviously walk as they were doing so when being interviewed. The thought that came to mind was that these people are probably leaches on society, living on welfare, in public housing. Used to someone doing everything for them, incapable of making decisions on their own.

    I think that the dumbocrats are going to lose Montana, W. Virginia, and Missouri for sure so they have to overcome those losses. Maybe Florida too. Maybe North Dakota also.

    We can get them out of here any day that we really want to. The other problem is people here on refugee visas and here on lottery visas. Probably around 30 million people.

    The problem is the amount of money that they are costing us. Free heathcare, educating the kids, etc, etc, etc. These are serious bucks.

    Rick Scott can spend whatever it takes to win, but the Republican establishment is finally coming around since they’re facing Robert Francis pulling out the win in Texas.

    Jeb! had a chance to take out Bill Nelson 12 years ago, but the (arguably) smarter Bush brother’s heart hasn’t been in politics since the 2000 election. Jeb! won reelection in 2002 because the Dems ran a shrill, single issue candidate, a bought and paid for chore boy of the teachers’ unions.

    Same thing happened at my uncle’s funeral. Lot of relatives showed up that I did not know existed. I suspect they were there to try and convince my aunt they deserved some money.

    One exception was some relative that I did not know. He was a retired nuclear sub commander. Interesting talking to him. I asked a lot of questions, many he simply said he was unable to answer. Never gave the reason but I could make a good guess that he knew the answer to most, if not all, of my questions and the answer was highly classified.

    I was surprised at his travel restrictions. He was not allowed to leave the US without permission of the state department. Not even to go to Canada. Any travels by air that left US territory had to have the route pre-approved as he was not allowed to fly over any unfriendly or communist country. He even had to inform the flight crew in case the flight crew needed to make an emergency landing in an unfriendly country. Will be like that for the rest of his life.

    The rest of the unknowns that showed up were just after the money. My mother, my aunt’s sister did not show up because no one would pay for her plane ticket from CA to WA. I know my mother would have really tried to clamp onto the money.

    When I removed my aunt from WA to TN and put her in assisted living I had to dispose of most of her stuff. I told my mother and my mother wanted my aunt’s car. I told my mother that was my aunt’s property and the money from the sale needed to go to cover my aunt’s expenses. Told my mother she could buy the car for 10% under what the car dealer would pay. That made my mother livid as she said she deserved the car. The conversation ended quickly when I said NO and she hung up on me.

    In my mind I had a fiscal responsibility to properly manage the resources and money. Even though I wanted to take it all and dump my aunt on the system for the abuse I suffered growing up. My moral compass kept me pointed in the right direction although my resentment said otherwise.

    Nope. It is almost always true that the president’s party loses seats in the House in the midterms. Trump fatigue is real and is costing votes in suburban areas, especially with women. If he would just STFU on Twitter it would help. But that is not going to happen. I see that in my House district – the incumbent (R) is in a desperate fight in a district he won handily, despite Hillary winning the local vote. The district went heavily for Cruz in the presidential primary, btw.

    It is almost always true that the president’s party loses seats in the House in the midterms.

    Understood, but I don’t think the Republicans will lose the majority. Not without fraud.

    Just look at what the Democraps are doing to Kavanaugh and how they are doing the same thing to anyone who dares to run against the Democraps.

    Be alert. The Evangelicals are being infiltrated by the Democraps under the guise of making up for past unfairness. Repent you sinners and vote Democrap. I am becoming more and more concerned about the crap appearing in the sermons of my Evangelical Preacher Nephew. We are having some doozy “discussions,” and he has yet to see the light how he, and other church leaders, are misinterpreting scripture. They are falling into the “free stuff for all” trap and ignoring personal responsibility and who is truly accountable.

    Good for you. If all people stood up like this to take care of their relatives, the world would be a lot better.

    Sounds like you had two situations to grow up with, bad and worse. Bad was bad but it could have been worse.

    I have been suspecting for quite a while now that fraud is happening in much of the voting across the fruited plains. When Texas moved to voting with picture id only, a lot of that crap stopped but they still try.
